Since Minotaurs are half man, half bull, why not just make a "Bull" unit? It would be statistically pretty much identical to this guy - pierce attack (horns), moves quickly, mounted resistances - but it wouldn't have the weirdness of a bull-man-horse hybrid that has a horse's lower body, a man's upper body, and a bull's head.
It doesn't need to be mounted, either - presumable the bulls are allies with their bull-man descendants/cousins/whatever.

I kind of like the minocentaur.

That'd be a little to humanoid in my opinion, he'd seem awfully weak compared to the others.

I had assumed that was a bull's lower body, not a horse's. Well essentially it is a minotaurs body on a horse. Ideally i do want to keep the sprite as it does fit in with the faction. God either im getting worse, or these sprites are getting harder.

Ok here is the Roc. Its the lvl 2 and it doesnt evolve any further.
I really dont like the right wing (his left) Maybe i jsut need a fair bit more work on him. Any suggestions?

Initially he was a more yellow colour, but he looked far too out of place. The only colour that went well with the minotaurs, that still made it look like a bit was the browns. Ill try and add some yellows and whites in thoughLim_Arcadia wrote:he looks a bit too much like the minotaurs, they should probably be different colors.

Roc looks more speckled then feathered, the eyes don't have much depth and the wings seem to jet out and bend abruptly you could always try the Grey used in the other units. Or maybe a medium tan? Are you going to keep him in the air? he looks really cool though. like the hippogriffs on the gnome team.

Yeah, i'd switch in some of the greys and tans used in the gryphons. And make the standing frame with the wings closed - you simply can't have them wide enough to look right and not break the hex or make it too small - this guy should be at least as big as the gryphon, if not bigger.
