How do i determine how many units is enough to spare gold in a campaign? When is moving leader off the keep acceptable?

it depends on the scenario (number of enemies) usually it is one or two keeps of recruiting/recalling

By trial and error until you gain enough experience to judge the flow of campaigns. And then by trial and error again when you run into a campaign that uses a different flow

You can read the scenario walkthrough, which usually gives a hint as to how much you should recruit. Without information, I usually buy level 1 units until upkeep is about to start eating into my income; then I try to make do with those forces, but usually I will have to buy more, so then I buy more level 1's until I have only enough gold for one round of recalls, which will usually be all level 2's but possibly a level 3 or two. Between attrition of units and capturing more villages, your ending gold probably won't be too negative this way. It's sometimes tough to decide when your leader should advance off the keep, but often there are other keeps to be had if you need to recruit more later.

On the other hand, if I'm going blind into something, I'll recruit half level 1 fodder and recall half my best units. I never recruit if it'll send me into negative income, but I'm happy enough to go into debt for recalls.
