I'm assuming that you mean the zolphas in A Gryphon's Tale. It's a fairly cheap trick, really - they can move into cave walls, where they have 98% defence. Because they're so weak the enemy likes to attack them anyway; put one on a protruding corner and it should rack up 2 or 3 xp a turn. It's slow, but it'll level eventually.

It's best to do this with several zolphas, because if they get hit once they die - and with the number of attacks it takes to level them up, that chance comes through more than you'd expect.
