I like seeing the "last post" section of the forum which isnt being displayed on mobile.

I don't think there is a mobile version of the forums. What it does it react to the device screen geometry. When I narrow my desktop web browser, sure enough, the design drops some columns. I looked and the change occurs at 700/701 pixels width. So if your device is over 700 pixels tall, just rotate so it's over 700 pixels wide.

Both Chrome and Firefox on Android have a Desktop option in their menu which among other things results in them pretending the viewport is larger than it actually is. I don’t know about any other browsers or iOS.
