Count me in if you want maps made. I really enjoy the map making process, and have a bit of time while I'm waiting for 1.1 to be packaged for OS X. I don't know how well I'd be able to do the overall world map, but I can try my hand at some quest maps.

To do both you'll need to learn WML, a fairly easy scripting language. Many tutorials are available at the wiki.

Outstanding. I think that's the first useful thing I've done for the mainline branch!

Any word on a (sort-of) stable 1.1 for OS X? I'd like to have the South Guard be a 1.0.x campaign and make The North Wind be a 1.1.x campaign.

It'd be great if someone would create another good campaign for the Orcs, like Turin did with Scepter of Fire for the Dwarves. It's much easier to add units to campaigns than to multiplayer, as concerns of balance and whatnot are easier to address.
