In the past I normally picked Paladin for the Healing. But as some have said that is not so useful. Now I would perfer Grand Knight except for VS undead or hard to hit units like Orcish Assassians. Better to have that extra attack.

Unless the map dictates a specific strategy, for example lots of rough terrain/water etc use the ghost/bats to control the fringes, then you start off with a nice balanced undead force. If you start to get good lead in income you can switch to horde at any time to ensure the demise of your opponant.

Leveling leaders

By far one of the most important factors is leveling your leader ! L2 Konrad now has a range attack + leadership this is HUGE!
