A few more suggestions that come to mind: Something like a pig would make sense, could go with the peasants. A deer (or elk or moose) would also be good for a lot of scenarios. I think that chicken sprite is the old cockatrice. Speaking of flightless birds, would something like a moa or ostrich go ...

Thanks for the suggestions. I think I'll declare humanoids out of the scope of this, as they would require more lore, we can revisit a couple of them if there is enough interest.
